There’s something quietly special about mead. Perhaps it’s the way it carries history as one of the oldest alcoholic drinks in the world, and yet still feels unexpected and new. Or perhaps it’s the simplicity at its heart: honey, water, yeast… and time.
At Fireside Meadery we’re drawn to that simplicity. Not to rush it, but to respect it.
Every batch begins with honey, carefully chosen for its character, not just its sweetness. The floral notes, the depth, the subtle variations from season to season all play a role in shaping the final result.
From there, the process is guided with intention and patience. Fermentation is never hurried. Flavours are allowed to develop naturally, creating something that feels balanced, smooth, and quietly complex.
Our mead is carefully crafted in small batches, using a long fermentation style. Most batches take 3-4 weeks to properly ferment, followed by 3-6 months of bottle aging to develop its palatable flavours and ensure quality.
To us, mead isn’t just something you pour into a glass, it’s something you experience.
It belongs at candlelit tables, at slow evenings with good conversation, at gatherings that feel warm and easy. It’s meant to be shared, to be noticed, and to gently elevate the moment.
That’s the feeling we keep in mind with every batch we create.

Our journey with mead began in 2020, during the COVID-19 pandemic, a season that quietly reshaped so many lives, including our own. Connor and Maria had just returned home to Nova Scotia with the intention of beginning their life together, not yet knowing where that path would lead.
It was Maria’s father, Andrew, who first embraced mead-making as a hobby. What began as a simple, creative pursuit soon sparked something more. Inspired by those early brews, Connor, a trained fermentation specialist, began developing his own recipes, exploring the balance of flavour, technique, and time.
The results were remarkable.
After many conversations and quiet deliberation, Connor and Maria decided together to take on the adventure of entrepreneurship. From that decision, Fireside Meadery was born.
Our story is one of perseverance, teamwork, and of recognizing opportunity even in uncertain seasons. It’s a reminder that something sweet can, indeed, come from even the most unexpected circumstances.
Every bottle we offer is created with the same intention: to feel welcoming, thoughtful, and just a little bit special.
